Bethenny Frankel once said, “Your diet is a bank account. Good food choices are good investments.” The ultimate busy woman couldn’t be more right, especially when it comes to breakfast. As students, we often skip the most important meal of the day or choose sugary alternatives. However, eating a nutritious and delicious breakfast doesn’t need to take a lot of time. I’ve gathered the recipes for my three favorite morning meals, which allow those of us on the run to properly invest in our bodies.Â
1—Oatmeal with Berries. To make the oatmeal, boil water in a saucepan (2/3 cup), then add the oats (1/3 cup) and cook uncovered for about 3-5 minutes, stirring occasionally. I always use Quaker, but I’m sure there are other good oatmeal brands out there. Alternatively, you can choose the microwave option, which takes about half the time. Then, add a handful of berries and a teaspoon of peanut butter. I like to mix everything together to give the oatmeal more flavor, but any way you eat it, it’s still delicious.
2—Avocado Toast. This extremely Instagramable delicacy can be quickly customized to appeal to your taste buds. Personally, I chose to cut a slice of a whole wheat loaf, which I then smear with hummus or cream cheese. I love spinach, so I place a hand full of spinach leaves onto the bread. Then comes the main event: the avocado. I’m usually quite generous with how much avocado I use, as I normally utilize about half, but it’s up to you. Just remember that it’s breakfast and that you may not be eating for a little while.
3—Yogurt with Granola. I have to be honest and tell you that sometimes, I cheat with this recipe and use chocolate granola. In any case, the meal ends up being rather healthy and easy to make. Start off with a bowl of yogurt. I prefer plain Greek yogurt since there is already enough sugar in the toppings, but you can use whatever is available. I then add granola, hemp seeds, and some berries to finish the dish.
