Acai bowls are everywhere, which makes sense since they are delicious as well as trendy, and yes even food can now be a trend. If you have not yet tried one, you are missing out; they are the donut of healthy food. If you are reading this thinking to yourself, “What is an acai bowl?” then fear not because I will break it down for you, and tell you just how to make this delicious and healthy breakfast that is sure to leave you full until lunch.
To make this healthy treat you will need to gather some ingredients ahead of time. For my recipe I recommend the following:
- 1 unsweetened frozen acai berry packet
- 1 ripe mango
- 1 ½ cup frozen mixed berries (I get a cherry, raspberry, blackberry and blueberry blend)
- ¼ cup unsweetened almond milk (can substitute any milk of your choice)
I chose to use the unsweetened products listed above as I prefer the fruit to give it the sweetness, but if this is too bitter you can easily swap for the sweetened versions of the ingredients above. I put all of the ingredients into a blender and blend until it is a thick consistency in order to support the toppings. This recipe makes two to three bowls so portion out one bowl and put the rest in the freezer for later. Next come the toppings. Here is where you have free reign and can use whatever you have in your refrigerator and pantry.
When I make my bowl I stick to the same base which is one layer of granola and a tablespoon of chia seeds directly on top of the acai smoothie. After the granola I usually sprinkle on walnuts and then add various fruits I have at the time. Often I slice up strawberry or kiwi and add some berries. Other popular toppings you can add are: coconut shavings, honey, peanut butter, or banana. The possibilities are endless and make for a unique but healthy breakfast.
